UM YES! Sugar and Type obviously has a sweet tooth! It’s ridiculous and I can’t wait to try this!
Chocolate and Sweet Potato Protein Cake
- 2/3 cup of sweet potato puree
- 3 egg whites
- 1 tbsp coconut flour
- 1 tbsp cacao powder
- 1 tbsp vanilla extract
- 1/2 cup shredded carrots
- 1 tbsp coconut
- cinnamon to taste
- nutmeg to taste
- 1 scoop of vanilla whey protein powder
- sprinkle of flax seeds
- 1/4 tsp baking powder
Directions: Mix dry and wet ingredients in separate bowls. Add wet to dry ingredients and mix thoroughly. Pour into two ramekin dishes or mugs and cook in microwave for 4 minutes. While cooking, make topping:
- 1/4 cup almond milk
- 1 tbsp dark chocolate organic peanut butter
- 1 banana mashed
- teaspoon vanilla extract
- spoonful of low fat cottage cheese
Directions: Add ingredients to blender…I usually add liquids first so the peanut butter doesn’t stick to the bottom of the blender. Blend. You can also make the topping without a blender by just whisking the ingredients in a bowl. Once cakes are completed let cool for 2-5 minutes. Place one on a plate, spread some of the icing on the top, add second cake and pour the remaining icing over the cake.
